Gayl J. Canfield, Ph.D., R.D., L.D., has served as nutrition educator at the Pritikin Longevity Center & Spa since 2005. An acclaimed nutrition professor, researcher and lover of fine food, Dr. Canfield offers expert advice on a diversity of hot health topics, including nutrition and cancer prevention, losing weight and keeping it off, women's health, healthy eating in restaurants, label reading and healthy cooking.
Since 1991, Dr. Canfield has taught nutrition at both the graduate and undergraduate levels as well as in continuing education seminars for dietitians. Courses include "Nutrition and Aging" and "Nutrition and Cancer Prevention." She has also published numerous studies and abstracts in peer-reviewed journals such as the Journal of the American Dietetic Association and Anticancer Research.
