Cinnamon Grilled Pineapple With Coconut Cream Cheese

When the burgers and dogs come off the grill, throw on some pineapple for a delicious dessert that's healthier than a batch of brownies.


  • 1 pineapple, cut into spears
  • 2 tablespoons ground cinnamon
  • 1 4-ounce package cream cheese, at room temperature
  • 1 tablespoon powdered sugar
  • 1 teaspoon coconut extract

1 Heat grill to medium-low heat.

2 Place pineapple spears on grill and sprinkle liberally with cinnamon.

3 Grill pineapple 3 minutes on each side until tender.

4 Combine, cream cheese, powdered sugar, and coconut extract in a small bowl.

5 Top warm pineapple spears with cream cheese and serve.

  • To save time, buy pre-cut pineapple.

This is my #1 dish of the summer!! I've had grilled pineapples before, but the coconut cream cheese takes it to another level!! Coconut and Pineapple are like Bert and Ernie-you can't have one without the other! I thinned out the cream cheese with some milk just to make it more dip-able.
