You'll practically feel the warm island breeze and hear the steel drums when you make this delish Caribbean dish. Now where is that cabana guy with your pina colada?
Dish Needs:
1 teaspoon bottled chopped garlic
1 cup frozen chopped onion
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
1 14½ -ounce can diced tomatoes
½ cup coconut milk
½ cup milk
1 teaspoon dried cilantro
1 pound shrimp, raw, peeled and deveined
Dish It Out:
1. Cook the garlic and onion in the oil in a large skillet over medium-high heat until the onions are tender, about five minutes.
I loved this dish, easy and delicious! Even my kids liked it (I reduced the spices a little). As for your question Mamalils, I happen to live near "a" Chinatown where I can get fresh shrimp at a very reasonable price. I heard Costco has very good quality frozen shrimp!
Mamalils- One thing I do to make shrimp less expensive is buy the smallest ones available. Larger shrimp are often $7 or $8 per pound, but if you get small ones (60-100 ct), they are much cheaper-- and easier for little hands to eat.
When is the best (and by best I mean cheapest) time to buy shrimp? I always want to make it but whenever I get the urge it's always so expensive. Are there any secretst to shrimp buying?
