Healthier breakfast alternative to pancakes. Filling, but doesn't sit like a stone in your stomach like pancakes do. Helps toward meeting your daily protein and dairy requirements.


  • 1 1/2 cups milk
  • 3 egg yolks
  • 2 tablespoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 5 tablespoons melted butter
  • 1/2 teaspoon salt

1 In a large bowl, mix together the milk, egg yolks, and vanilla.

2 Stir in the flour, sugar, salt, and melted butter until well-blended.

3 Heat a crepe pan, or small nonstick pan, over medium heat until hot.

4 Coat with cooking spray.

5 Pour about 1/4 cup of batter into the pan and tip to spread the batter to the edges.

6 When bubbles form on the top and the edges are dry, flip over until lightly browned on either side, and edges are golden.

7 Repeat with remaining batter.

8 Fill crepes with your favorite fruit, cream, caramel or even ice cream or cheese to serve.

9 Recipe makes 12 crepes.

  • I recommend spooning the flour from the bag into the measuring cup one spoonful at a time. When you pack a measuring cup, you'll end up with thicker crepes as a result, and they're supposed to be light and airy.

Made them and absolutely loved 'em! My kids literally freaked out, and wouldn't stop asking for more... awesome recipe. Thanks!
