Edamame Basil Salad

These yummy soy beans add an extra dose of protein to your meal, but saying "edamame for mama" is the real fun.


  • 1 package (15 ounces) edamame, frozen, shelled
  • 1½ cups cherry tomatoes, quartered
  • ½ cup fresh basil, chopped
  • 1 yellow bell pepper, chopped
  • balsamic vinaigrette dressing, to taste

1 Boil edamame for 5 minutes. Drain and rinse with cold water until cool.

2 Toss with tomatoes, basil and yellow bell pepper.

3 Add dressing.

  • Add extra basil for a fresh taste.

I made this the other day for a picnic and everyone really enjoyed it. I made my own balsamic vinaigrette, instead of using bottled and I added a little grated parmesan to it. Really good and healthy!
