Fall Recipes: Ashleigh Loughrey Potato Soup

Warm, loving, sooo good soup!

  • 2 tbsp butter
  • 1 tbsp self rising flour
  • 1 large onion, chopped
  • 1 medium bunch celery, finely chopped
  • 6 medium potatoes,diced
  • 8 cups milk
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 1
    Melt butter in cooker or large pot.
  • 2
    Add flour.
  • 3
    Cook and stir over low heat until smooth.
  • 4
    Add onion, celery, diced potatoes, milk, salt and pepper.
  • 5
    Place a cover on cooker and simmer 30 to 40 minutes.

    Do not let it boil.
