Fall Recipes: Low-Fat Pumpkin Chocolate Chip Cookies

When you want to eat a whole box of cookies ... make these and forget the guilt! Will serve one pregnant lady or a family of 4 (48 cookies)!

  • 2- boxes cake mix (spice, yellow, white, butter pecan)
  • 1- 29 oz can pumpkin (NOT pumpkin pie filling)
  • 1- bag semisweet chips/chunks

    Preheat oven to 350 degrees.

    Mix cake mixes and pumpkin until there are no lumps.
  • 3
    Fold in semi-sweet chips/chunks.
  • 4
    Drop by large spoonfuls onto sprayed cookie sheet.

    Bake for 12-15 minutes. Cookies will be soft and moist. YUMMMMM!
  • Low-fat & high fiber (from the pumpkin) perfect for satisfying those pregnancy cravings for sweets.
