Fourth of July Recipes: Patriotic Parfaits

- For the blue and red gelatin:
- 1 pkg (4-serving size) blue gelatin (such as Berry Blue Jell-O)
- 1 pkg (4-serving size) red gelatin, any flavor
- 2 cups boiling water, divided
- 2 cups cold water, divided
- For the white gelatin:
- 1 envelope gelatin (such as Knox)
- ¼ cup cold water
- 1 cup boiling water
- ⅓ cup sugar
- 1 tsp vanilla or almond extract
- 1 cup sour cream
- 8 oz cool whip
Make the blue and red gelatin: Dissolve the red and blue gelatin in 2 separate bowls with 1 cup of boiling water each. Stir until the gelatin is completely dissolved.
Add 1 cup of cold water to each bowl, stir and pour into separate 9-inch pans.
Chill until set, about 4 hours.
Make the white gelatin: Dissolve the envelope of gelatin in ¼ cup of water. Add 1 cup of boiling water and stir until completely dissolved.
Stir in sugar, vanilla or almond, sour cream and cool whip.
Pour into a 9-inch pan and chill until set, about 4 hours.
When ready to serve, cut the gelatin into squares and layer in parfait glasses.

- For an extra touch, top each parfait with a dollop of whipped cream.
