Fourth of July Recipes: Patriotic Parfaits

  • For the blue and red gelatin:
  • 1 pkg (4-serving size) blue gelatin (such as Berry Blue Jell-O)
  • 1 pkg (4-serving size) red gelatin, any flavor
  • 2 cups boiling water, divided
  • 2 cups cold water, divided
  • For the white gelatin:
  • 1 envelope gelatin (such as Knox)
  • ¼ cup cold water
  • 1 cup boiling water
  • ⅓ cup sugar
  • 1 tsp vanilla or almond extract
  • 1 cup sour cream
  • 8 oz cool whip
  • 1
    Make the blue and red gelatin: Dissolve the red and blue gelatin in 2 separate bowls with 1 cup of boiling water each. Stir until the gelatin is completely dissolved.

    Add 1 cup of cold water to each bowl, stir and pour into separate 9-inch pans.

    Chill until set, about 4 hours.

    Make the white gelatin: Dissolve the envelope of gelatin in ¼ cup of water. Add 1 cup of boiling water and stir until completely dissolved.

    Stir in sugar, vanilla or almond, sour cream and cool whip.

    Pour into a 9-inch pan and chill until set, about 4 hours.

    When ready to serve, cut the gelatin into squares and layer in parfait glasses.
  • For an extra touch, top each parfait with a dollop of whipped cream.
