Kid Healthy Snack: Munchy Oat Bars

These oat bars are packed with energy—kind of like your kids.
- ¾ stick butter
- ½ cup packed light brown sugar
- 3 tablespoons honey
- 1½ cup quick-cook oats
- ½ teaspoon salt
- 4 large dried apricots
- ¼ cup raisins
- ¼ cup dried cranberries
- 1/3 cup dried coconut
- ¼ cup pecans or pumpkin seeds
Preheat oven to 350 degrees
Melt the butter: Put the butter, sugar and honey into a saucepan and melt together over a low heat.
Add together: Put the rest of the ingredients into a large bowl. Snip the apricots with scissors; snap the pecan nuts.
Mix it all up.
Add the honey mixture: Pour the warm butter and honey mixture into the bowl.
Mix again: Now stir until everything is well mixed together.
Spoon into a baking pan: Line and grease an 8-inch square baking pan. Spoon the mixture into the pan and press down with a potato masher to level the surface. Now it's ready for the oven.
Bake in a preheated oven for 20 minutes. Cut into bars or squares when cool, then store in an airtight container.
