Shrimp & Edamame Salad

Wanna pack a protein punch in your lunch (or dinner)? Mix shrimp and edamame (fresh soy beans) into a citrusy salad. (Carbs? What carbs?)

  • 1 pound frozen, shelled edamame
  • 1 orange
  • 1 pound frozen, fully cooked medium shrimp, thawed
  • 1 head of lettuce, washed and shredded
  • 2 scallions, trimmed and sliced
  • 1/4 cup rice vinegar
  • 5 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 teaspoons white vinegar
  • 1-2 shakes garlic powder
  • 4 teaspoons sesame oil
  • 20 drops of hot sauce
  • 1/8 teaspoon pepper
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/3 cup olive oil
  • 1
    Cook the edamame according to package directions. Drain and cool.

    Peel oranges, break into sections, and cut each section into 2-3 pieces.

    In a salad bowl, combine edamame, orange pieces, shrimp, lettuce and scallions.

    Make the dressing by whisking together the rice vinegar through the salt. Slowly add the olive oil, continuing to whisk the mixture.

    Add the dressing to the bowl, and toss to combine.

    Add salt as needed.
