Summer Recipes: Magic Peach Cobbler

I always get rave reviews from company (and family) when I make this easy dessert.
- 2 8 oz. bags frozen peaches (sliced and peeled) or 1½ lbs. fresh peaches (sliced and peeled)
- 1 cup sugar
- 2 tsp cinnamon
- freshly grated nutmeg (a dash)
- ½ cup butter, softened
- ½ cup sugar
- 1 tsp baking powder
- 1½ cups flour
- 1½ cups buttermilk
- 1 cup boiling water
- 1 tbsp butter
Mix still-frozen peaches, 1 cup sugar, cinnamon and nutmeg in a large bowl. Set aside.
With an electric mixer, cream butter and sugar until creamy. Add baking powder and flour. Slowly pour in buttermilk. Mixture should be soft.
Spray cooking spray in 9 X 13 pan. Pour flour mixture into pan and spread evenly with rubber spatula.
Cover flour mixture with prepared peaches.
Melt 1 tbsp. butter in boiling water. Pour water over peaches. Don't worry ... you haven't drowned your cobbler even though it may look like it!
Bake at 350 degrees for 1 hour. Serve with ice cream or whipped cream.

- You can substitute frozen blueberries or blackberries for the peaches if you want.
