Summer Recipes: Nectarine Cream Pops

- 1 cup peach juice
- 3¾ cups chopped nectarines, divided
- 1 cup milk
- 1 cup plain yogurt
- 2 tsp pure vanilla extract
- 2 tbsp wheat germ
In a small bowl, combine the peach juice with ¾ cup of the nectarines. Set aside.
Combine 1 cup of the nectarines with the milk, yogurt, and vanilla extract in a food processor or blender; process until the mixture is smooth.
Stir in the remaining 2 cups nectarines and the wheat germ.
Partially fill the pop molds with the peach juice mixture and freeze for at least 2 hours. Fill the pop molds with the milk mixture. Insert the sticks. Freeze for at least 6 hours.
Remove from the freezer; let stand at room temperature for 5 minutes before removing the pops from the molds. Savor the nectarine's perfect balance of sweet and tangy.

- Tilt the pop while freezing the peach juice to create a diagonal stripe.
- Replace the nectarines with peaches for an easy alternative.
