Dilly Green Beans Amandine

  • 1 pound fresh green beans
  • 2 tablespoons butter
  • ¼ cup sliced almonds
  • 1 teaspoon lemon juice
  • ½ teaspoon dill
  • Salt and pepper to taste

    Trim ends of green beans. (Give older kids kitchen scissors and let them do this part.)

    Boil water in a large pot and add green beans. Cook 10-15 minutes until beans are tender, but not limp. Remove from heat, drain and set aside.

    Melt butter in a pan over low heat and stir in almonds. Cook 2-3 minutes until lightly toasted.

    Stir in lemon juice, dill and salt and pepper.

    Add drained beans and stir to coat. Cook an additional 2-3 minutes just to heat through.

    Remove from heat and serve.
