Valentine's Day Recipes: Ice Cream Heartwiches

These ice cream cookie sandwiches will warm your kids' hearts when you pull them out of the freezer.
- 1 roll (16.5-oz) refrigerated sugar cookie dough, at room tempurature
- 1/3 cup cocoa powder
- Strawberry ice cream
Preheat oven to 325 degrees and line a 9 by 13 inch pan with parchment paper.
Remove ice cream from freezer and place in refrigerator.
Place the cookie dough in a medium mixing bowl and stir in cocoa powder until it is fully combined.
Put cookie dough in prepared pan and spread evenly to cover the entire pan.
Poke cookie dough with a fork to form rows of dots.
Bake in preheated oven for 12-15 minutes.
Remove from oven and allow to cool 1-2 minutes (do not let cool completely). Then, use a heart-shaped cookie cutter to cut out cookie hearts. Allow the hearts to cool completely.
Line a cookie sheet with parchment paper.
Lay half of the cookies face-side down on the cookie sheet and top with about ½ inch of the softened ice cream. Place a second heart face-side up on top of the ice cream to form a sandwich.
Immediately place sandwiches in freezer to harden before serving.
