Fruit Sushi

Raw fish? As if! Have your kid make "sushi" with fruit.

Bust out strawberries instead of raw salmon and invite your kids to make up a batch of fru-su—short for "fruit sushi," of course!
  • Fru-su chefs:
    You and the kids.
  • 1¾ cups short grain rice:
    Brown or white, whatever you can get the kids to eat.
  • Rice cooker or pot
  • A big bowl
  • 2 tablespoons sugar
  • 10 ounces water
  • 3 tablespoons coconut milk:
    Optional, but will add some flava!
  • Fresh fruit:
    Whatever's in season. If you want the kids to help cut it, grab some soft stuff, like bananas, peaches and kiwi that they can tackle with a butter knife.
  • Butter knives:
    See above.
  • A knife:
    A sharp one for you if you're cutting hard things like apples and pears.
  • Fruit roll-ups
  • Maple syrup:
    A.k.a., "soy sauce."
  • Yogurt:
    Something white or light-colored.
  • Green food coloring
  • A serving dish
  • Chopsticks
  • Saucer

    Break out the rice cooker or a pot and cook up a batch of short grain rice.

    Add the coconut and sugar.
  • 3
    Help your kid spoon the rice into a big bowl.

    Invite him to dig into the bowl of rice and make a bunch of little "sushi" rolls about the shape and size of mini Snickers bars and place them onto a serving dish. (Hint: Wet your kid's fingers with a little water so the rice doesn't stick to them.)

    Help your kid use the scissors to cut the fruit roll-ups into thin strips. Set them aside.

    Help your kid slice up some fruit into small, thin, sushi-like pieces. Challenge each other to cut the most convincing fish-shape. (Cantaloupe makes a killer stand in for salmon.)

    Have him lay a slice of fruit onto each rice roll.

    Finally, use the fruit roll-up strips to secure the fruit on the roll by tying one around each roll.

    Now take a little of the yogurt and have your kid mix in some green food coloring until it's the same color as wasabi. Put it in a small serving dish.

    Pour a little maple syrup into a saucer to take the place of soy sauce.

    Your fru-su is finished! Break out the chopsticks and chow down, Tokyo-style.
