Baked Fish Sticks

You'll love NOT frying these fish sticks. Your kids will just love them.
- ½ cup flour
- 1 egg
- ½ cup plain dried bread crumbs
- 2 tbsp grated Parmesan cheese
- 2 tbsp cornmeal
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp paprika
- 1 lb tilapia fillets, cut into ½-inch strips
- cooking spray
Preheat oven to 425 degrees. Coat a baking sheet with cooking spray and set aside.
In a small bowl, add flour and set aside.
In another small bowl, beat egg and set aside.
In a third small bowl, combine the bread crumbs, Parmesan cheese, cornmeal, salt, garlic powder, and paprika, and set aside.
Dip each fish strip in the flour, turning to coat all surfaces. Shake off any excess flour.
Dip floured fish into egg, then dip into bread crumb mixture, gently pressing so mixture sticks. Arrange fish sticks on prepared baking sheet and lightly coat with cooking spray.
Bake until the breading is golden brown and crisp, and the fish is cooked through, about 10 minutes.
