No Measure Marshmallow Crisps

Chewy, crispy and lightly sweet - great for feeding the constant summer swarm of neighborhood kids! These are simply Rice Crispy treats - the proportions and recipe is mine.
- 1 stick butter
- 1 (16 ounce) bag MINI marshmallows
- 1 (13.5 ounce) box crisp rice cereal
Melt butter over low heat in large stock pot.
After coating mixing spoon with butter, add marshmallows, about 1/3 bag at a time (prevents marshmallows from adhering to pot side - its dried adhesive strength rivals liquid cement!). Maintain a slow stir.
Once all marshmallows have morphed into goo, pour cereal, about 1/5th box at a time, coating each addition thoroughly before adding next.
With buttered hands, press into large casserole dish (or 2, depending how thin or thick you like 'em). Cover and allow to cool before serving, about 10-15 minutes. Cut into serving portions. Number of servings depends on what you consider a serving!

- A sprinkle of cinnamon makes a great twist to this classic. Also, if you use a 10 ounce bag of marshmallows, they will be hard; makes a tasty cereal when crumbled into a bowl and served with milk.
