Apple Zucchini Bread

Hot zucchini bread is one of my favorite fall treats.
- 3 cups flour
- 2 tsp baking soda
- 1½ tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1 tsp freshly ground nutmeg
- ½ cup buttermilk
- ½ cup vegetable oil
- ½ cup applesauce
- 3 eggs
- 1 cup white sugar
- 1 cup brown sugar
- 2 tsp vanilla
- 1 lg apple, grated
- 2 zucchini, grated
- ½ cup chopped walnuts (optional)
- ½ cup shredded coconut (optional)
Preheat oven to 350 degrees. Spray two large loaf pans with cooking spray.
Stir together flour, soda, baking powder, salt, cinnamon and nutmeg. Set aside.
In large bowl, whisk buttermilk, oil, applesauce, eggs, sugars and vanilla. Add all at once to dry mixture. Stir just until blended.
Fold in apples, zucchini, walnuts and coconut.
Bake 50-60 minutes until a toothpick comes out clean.
Leave in pan to cool for ten minutes and then turn out onto a cooling rack to cool completely.

- Make several loaves and then freeze them wrapped in tinfoil for easy fall breakfasts or snacks.
