Baked Oatmeal

Who's got time for breakfast? YOU do! Especially when you bake some oatmeal and store it in the fridge for later. A quick zap in the microwave, and you've got a hearty bowl of instant oatmeal--the kind that doesn't come in a packet!

  • 2 cups old fashioned oats
  • 3 cups milk
  • 1 cup water
  • 1 cup apples, diced
  • ½ cup dried cranberries
  • ½ cup pecans, chopped
  • 1/3 cup packed brown sugar
  • 1 tbsp butter, melted
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp salt

    Preheat oven to 350 degrees.

    Grease a 2 quart casserole dish, set aside.

    In a large bowl, mix together all ingredients. Pour into the casserole dish.

    Bake in preheated oven for 45 minutes. Let cool for 5 minutes before serving.
