Eric Stromer's Super-Duper Kid-Pleasing Cowboy Crepes

- ⅔ cup flour
- ½ tsp salt
- 3 eggs, beaten
- 1 cup milk
- 1 (8-oz) package cream cheese
- 1 (16-oz) package frozen berries
- ½ cup sugar
Combine flour, salt, and eggs; beat until smooth
Gradually add milk, mixing until well blended
For each crepe, pour 1/4 cup batter into a hot, lightly greased skillet
Swirl the skillet to coat the pan bottom evenly
Cook over medium-high heat until lightly browned on both sides, turning once
Make cream cheese and berry topping: Combine the berries and sugar in saucepan.
Bring to a boil and then simmer for 10 minutes
Once cool, combine the berry topping with softened cream cheese
Spread mixture over crepes and roll
