Leftovers Shepherd's Pie

Whenever I have leftovers piling up, I make this shepherd's pie. My kids (and my hubby) gobble it up and I get to clean out my fridge at the same time.
- 2 tbsp butter
- 3 tbsp flour
- 2 cups chicken broth
- leftover veggies (broccoli, carrots, green beans, corn, peas-- whatever you have, toss 'em in).
- 2 cups leftover chicken or turkey
- 1 tsp thyme
- 1 ts poultry seasoning
- salt and pepper
- 1/2 cup shredded cheddar cheese
- 2 c.ups leftover mashed potatoes
- 1 tsp Italian seasoning
Melt butter over medium heat in large dutch oven or stock pot.
Once it's melted, use a whisk to slowly whisk in flour to make a thick paste.
Slowly whisk in broth and bring mixture to a boil. Mixture will thicken.
Add veggies, meat, thyme and poultry seasoning. Heat until warm.
Salt and pepper to taste.
Pour mixture into bottom of 8 X 8 casserole.
Cover with a thin layer of mashed potatoes.
Top with cheese and Italian seasoning.
Bake at 350 degrees for 15-20 minutes until potatoes are warm and cheese is melted.

- The more leftovers you have, the better this tastes!
