Leftovers Shepherd's Pie

Whenever I have leftovers piling up, I make this shepherd's pie. My kids (and my hubby) gobble it up and I get to clean out my fridge at the same time.

  • 2 tbsp butter
  • 3 tbsp flour
  • 2 cups chicken broth
  • leftover veggies (broccoli, carrots, green beans, corn, peas-- whatever you have, toss 'em in).
  • 2 cups leftover chicken or turkey
  • 1 tsp thyme
  • 1 ts poultry seasoning
  • salt and pepper
  • 1/2 cup shredded cheddar cheese
  • 2 c.ups leftover mashed potatoes
  • 1 tsp Italian seasoning

    Melt butter over medium heat in large dutch oven or stock pot.

    Once it's melted, use a whisk to slowly whisk in flour to make a thick paste.

    Slowly whisk in broth and bring mixture to a boil. Mixture will thicken.

    Add veggies, meat, thyme and poultry seasoning. Heat until warm.

    Salt and pepper to taste.

    Pour mixture into bottom of 8 X 8 casserole.

    Cover with a thin layer of mashed potatoes.

    Top with cheese and Italian seasoning.

    Bake at 350 degrees for 15-20 minutes until potatoes are warm and cheese is melted.
  • The more leftovers you have, the better this tastes!
