West Mex Chicken

Fast and Easy chicken recipe that I threw together a few nights ago with leftover ingredients and chicken so I wouldn't have to go to the store.
- 2 Boneless Skinless Chicken Breasts
- 1/2 C. Plain Cream Cheese
- 1/2 C. Shredded Cheddar or Mexican Blend Cheese
- Some Diced Green Chilies (as much as you like.)
- A few diced canned Jalepenos (Use as many as you like. We just use a few so it's not to spicey for anyone.)
- Taco Seasoning packet (or you can use your own blend of Chili powder, garlic powder, salt, pepper, lime, & cumin.)
- A few handfuls of crushed Doritos (I used all of the broken pieces left at the bottom of a bag.)
- One egg, scrambled.
Slice the Chicken breasts in 1/2 length ways.
Place halved Chicken breast flat between two pieces of plastic wrap.
Pound out chicken with a meat tenderizer until less than 1/4" thick.
Season Chicken with taco seasoning or your own blend of seasonings.
Mix cream cheese, cheddar cheese, green chilies, and jalapenos together in bowl.
Spoon equal amounts of cheese mixture onto chicken breasts.
Roll up chicken and dip in egg mixture.
Roll chicken in crushed Doritos.
Place chicken seam side down in pyrex baking dish.
Bake @ 375 degrees for 30 minutes.

- I served with black beans and mexi-corn.
