Crock-Pot Corned Beef

Most kids aren't crazy about cabbage. (Think back. Were you?) To make it kid-friendlier, beef up on the carrots and cut back on the cabbage. (Come to think if it, that's adult-friendlier, too.)

  • 8 large carrots, cut into chunks
  • 3 pounds corned beef
  • 2 cups water
  • ½ cabbage, cut into large wedges
  • Pepper, to taste
  • 1
    Add ingredients to crock-pot, in order given, arranging cabbage wedges around the corned beef.

    Cover and cook on low for 7 to 8 hours, until vegetables are tender.

    Remove from pot and serve with Irish Soda Bread and Shamrock Soda.
