Nutmeg-Scented Oatmeal Cookies

You can't have too many awesome oatmeal cookie recipes. Here's one to add to your repertoire.
- 1¼ cups (2½ sticks) unsalted butter, softened
- ¾ cup firmly packed brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 tsp vanilla
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2½ cups quick or old-fashioned oats
- 1 tsp ground cinnamon
- ¾ tsp ground nutmeg
- 1 cup raisins or 1 cup chocolate chips (omit cinnamon and nutmeg)
Heat oven to 350°.
In a bowl, combine the flour, baking soda, salt and cinnamon and nutmeg (if using).
In a separate bowl, beat the butter and sugars until creamy.
Add the egg and vanilla and beat well.
Add the flour mixture and mix well.
Add the oats; combine thoroughly.
Stir in raisins or chips (if using).
Drop dough in rounded tablespoonfuls onto ungreased cookie sheets. Flatten lightly with the palm of your hand.
Bake for 9 to 11 minutes. Cool for 2 minutes on the cookie sheet; remove to wire rack to cool completely.
