Flourless Oatmeal Cookies

I'm not a big fan of wheat, so these are great and don't make me sleepy.

  • 3 cups slow-cook rolled oats
  • 1 cup butter - unsalted and softened
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips OR 1 cup rasins
  • 1 1/2 cups brown sugar

    Preheat oven to 300 degrees.

    Save one cup of oatmeal and run the other two cups in the food processor until they break down into a flour.

    Mix the "oatmeal flour" with the cup of whole oats. Stir in salt and baking soda.

    Cream the butter and mix in brown sugar (no tasting!).

    Beat eggs. Add the eggs and vanilla to butter/sugar mixture.

    Mix in dry ingredients to the butter mixture.

    Fold in chocolate chips.

    Lay parchment or silicone on cookie sheets and drop small balls on them. Leave a lot of space for spreading. These cookies will be flat.

    Bake 13-15 minutes until lightly browned.
  • Be sure to space the dough balls out. You can also just cover the bottom of the cookie tray and make bars with this.
