Homemade Hot Pockets (Sweet)

I came upon this recipe by accident when I was having a hard time making the pocket pies I promised my friend for her baby shower. MANY VARIATIONS!
- 4 large, ripe granny smith apples, peeled, cored and sliced thin
- 1/2 cup sugar
- 2 tsp corn starch
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tbsp butter
- 1 pkg tortillas
- 1 egg beaten with 1 tsp water
- 1 pkg confectioner's sugar for sprinkling
- 1 bottle veg. oil for frying
Place apples, sugar, corn starch, cinnamon and salt into a bowl and toss to coat.
Add apple mixture to a skillet over medium/low heat. Add butter. Cook until tender and beginning to thicken, stirring all the while.
Warm tortillas in the microwave for 30 seconds so they are easier to work with.
Fill one tortilla with a little less than 1/4 cup of filling.
With your finger, spread egg wash over one half of the tortilla's edge. Pinch to seal.
In a heavy bottom skillet, heat an inch and a half of oil for 5 minutes over a medium/high heat. Test to see if the oil is hot enough (see note)
Place two pockets in at a time and cook one side for about two minutes. Check constantly to make sure it's not over browning. Carefully flip and cook another 2 minutes on other side.
Move to a cooling rack placed over a cookie sheet to cool. Sprinkle with confectioner's sugar and serve warm.

- To Test the Oil: Drop a piece of tortilla in. You should see bubbles right away and the piece should float. If not, turn up the heat a little bit and test again after a minute or so.
