Granola Fruit Cobbler

You are just three ingredients away from a delicious dessert!
- 2 cups granola, divided
- ½ stick butter or margarine, plus 1 tablespoon, at room temperature
- 1 (16-oz) package frozen sliced peaches (or other family favorite frozen fruit), defrosted
- Cooking spray
Preheat oven to 325 degrees. Coat an 8 x 8-inch baking pan with cooking spray and set aside.
In a food processor bowl, process 1 cup of the granola for about 30 seconds, until it is more like the consistency of thick flour.
Add the ½ stick of butter to the granola in the food processor and pulse until the mixture begins to come together in a ball.
Transfer the ball to a mixing bowl, add the remaining cup of granola, and mix together with your hands until the mixture is crumbly.
Place the fruit in the bottom of the prepared baking pan. Dot the fruit with pieces of the remaining tablespoon of butter.
Sprinkle the granola mix over the fruit. Bake for 30 minutes and serve warm. (If you increase the oven temp to 350 degrees, it can probably finish in under 30 minutes.)
