Cherry Clafouti

Clafouti is just the fancy French word for this easy-as-apple-pie (or cherry) dessert!
- 1/3 cup plus 1 tbsp flour
- ½ tsp baking powder
- 2 large eggs
- 2/3 cup half and half
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 cups pitted cherries (canned or frozen, drained)
- Cooking spray
Preheat oven to 400 degrees. Coat a 9- or 10-inch pie dish with cooking spray and set aside.
In a medium mixing bowl, stir together the flour and baking powder.
In another mixing bowl, beat the eggs and whisk in the half and half. Add the sugar and vanilla extract and stir well to mix.
Pour the egg mixture into the flour mixture, stirring only enough to combine completely.
Place the cherries in the bottom of the prepared pie dish.
Pour the egg and flour mixture over the cherries and bake for about 20 to 25 minutes, or until the center is set.
