Cherry Clafouti

<!-- -->

Clafouti is just the fancy French word for this easy-as-apple-pie (or cherry) dessert!

  • 1/3 cup plus 1 tbsp flour
  • ½ tsp baking powder
  • 2 large eggs
  • 2/3 cup half and half
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 cups pitted cherries (canned or frozen, drained)
  • Cooking spray
  • 1
Preheat oven to 400 degrees. Coat a 9- or 10-inch pie dish with cooking spray and set aside.
  • 2
In a medium mixing bowl, stir together the flour and baking powder.
  • 3
In another mixing bowl, beat the eggs and whisk in the half and half. Add the sugar and vanilla extract and stir well to mix.
  • 4
Pour the egg mixture into the flour mixture, stirring only enough to combine completely.
  • 5
Place the cherries in the bottom of the prepared pie dish.
  • 6
Pour the egg and flour mixture over the cherries and bake for about 20 to 25 minutes, or until the center is set.
  • French lesson: Clafouti is pronounced kla-foo-TEE and is a baked, custardy dessert consisting of fresh fruit and a thick batter.
  • You can make this with just about any of your favorite fruits – raspberries, apples, plums, peaches.
