Make-Ahead Breakfast Burritos

With a few of these on hand in the freezer, you can have a nutritious breakfast ready to serve at a moment's notice. Which is helpful, because a moment is usually all you have on a busy morning!
- 6 8-inch flour tortillas
- 6 eggs, beaten
- 1 tablespoon butter
- ½ cup chopped onion (1 small onion)
- ½ cup chopped bell pepper (approximately ½ pepper)
- Salt and pepper to taste
- Mix-in fillings (optional): Cooked chicken or turkey (shredded) or crumbled bacon
- Toppings (optional): shredded cheese, chopped tomatoes, salsa
Lightly coat a cookie sheet with nonstick spray.
Melt ½ tablespoon butter in frying pan over medium heat and scramble eggs until done. Remove from pan and put in large bowl.
Fry onion and green pepper in the remaining butter until soft (3 to 5 minutes). Add to the eggs and mix gently. If you are using the mix-in fillings, gently stir them into the egg mixture.
Roll the tortillas in a paper towel and warm in microwave for 20 seconds.
Put approximately ½ cup of the egg mixture along the center of each tortilla. Add any toppings you're using, roll up the tortilla and set it on a cookie sheet. Repeat until all the egg mixture is used. Place in the freezer until firm.
Once frozen, remove, wrap well with wax paper and aluminum foil and refreeze.
To serve, remove the foil, leave the wax paper on and warm in the microwave about 2½ minutes or until warmed through.
