Multigrain Pancakes With Flax

These quick and easy pancakes contain flax for an extra nutritional edge. Effortless and most excellent!
- 1 cup multigrain pancake mix
- 2 tbsp flax meal
- 1 cup buttermilk
- 1 large egg
Combine pancake mix and flax meal in a 1-quart bowl; set aside.
In a small bowl, beat egg lightly with a fork; add water and stir.
Add liquid to dry ingredients and stir quickly with a fork. Take care not to over-mix the batter—small lumps should be visible.
Preheat a nonstick griddle or frying pan on medium-high (375 degrees); it's ready when a drop of water "dances" across the top.
Pour batter on griddle, using ¼ cup batter (or less) for each pancake. Shapes like worms, bugs or small rounds are fun for kids to eat, plus they're easy for small fingers to pick up.
Fry pancakes until the top is covered with bubbles; size of pancake will determine the time.
Flip over and fry until the other side is light brown.
Serve topped with your child's favorite all-fruit preserves or a small amount of maple syrup. Makes about eight 4-inch pancakes.

- Flax seeds can be purchased in bulk at the natural-foods store and ground in your coffee grinder until coarse as corn meal. Store in the refrigerator or freezer to keep the oils from becoming rancid.
