New Year's Dropping Meatballs

These sneaky meatballs have baked-in veggies to make you feel a wee bit better about your holiday indulgences.

  • 1½ lbs ground turkey
  • ½ cup dry breadcrumbs
  • ¼ cup shredded carrot
  • ¼ cup shredded zucchini
  • 2 tbsp dried, minced onion
  • 1 large egg white
  • Salt and pepper, to taste
  • 1 tbsp brown sugar
  • ¼ cup soy sauce
  • ¼ cup vinegar
  • ¼ cup parmesan cheese
  • ½ cup jarred pizza sauce
  • ½ tsp garlic powder
  • ½ cup ketchup
  • 1 tsp vinegar
  • 1 tbsp brown sugar
  • 1 tbsp water

    Preheat oven to 400 degrees.

    Combine ingredients (turkey through salt and pepper, above) in a large bowl. Mix well.

    Form mixture into meatballs, about one inch in diameter.

    Place on a lightly greased baking tray.

    Bake for 15 minutes or until cooked through.

    While the meatballs are baking, make the dipping sauces.

    First, combine soy sauce, ¼ cup vinegar and 1 tablespoon brown sugar in a small bowl.

    Next, combine pizza sauce and parmesan cheese in a small bowl.

    Finally, combine ketchup, 1 teaspoon vinegar, 1 tablespoon brown sugar, water and garlic powder in a small bowl.

    Warm each of the dipping sauces in the microwave for 1 to 2 minutes.

    Serve meatballs with dipping sauces.
