Oatmeal Apricot Breakfast Bars

Try your oats in a bar instead of a bowl.

  • 1 cup all purpose flour
  • 1 cup quick cooking oats
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking soda
  • 6 tablespoons butter
  • 6 tablespoons canola oil
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ cup dried apricots, diced
  • 1
    Preheat your oven to 375°F. Spray a 9x13 pan with non-stick cooking spray.

    Combine first 5 ingredients in one bowl, set aside.

    Combine butter through vanilla in another bowl and mix with electric mixer until smooth and fluffy.

    Add dry ingredients to the wet and mix until incorporated. Add dried fruit.

    Add to flour mixture and combine until flour mixture is moistened.

    Press mixture into pan and place in preheated oven. Bake 20 minutes.
