Chili Broccoli Potatoes
Top off your 'taters with chili and broccoli!
- 4 large russet potatoes
- 1 can store-bought chili (use vegetarian if you want!)
- 1 cup frozen broccoli
- 1 cup shredded cheddar cheese
- Poke holes in potatoes with a fork. Wrap each potato in a wet paper towel and put in microwave for 6-8 minutes. Cook until soft.
- Meanwhile, heat chili in a small saucepan and cook broccoli according to package directions.
- Pile broccoli, chili and cheese onto potatoes.
