Chili Broccoli Potatoes

Top off your 'taters with chili and broccoli!

  • 4 large russet potatoes
  • 1 can store-bought chili (use vegetarian if you want!)
  • 1 cup frozen broccoli
  • 1 cup shredded cheddar cheese
  • 1
    Poke holes in potatoes with a fork. Wrap each potato in a wet paper towel and put in microwave for 6-8 minutes. Cook until soft.
  • 2
    Meanwhile, heat chili in a small saucepan and cook broccoli according to package directions.
  • 3
    Pile broccoli, chili and cheese onto potatoes.
  • 4
    Enjoy!
