Homemade Hot Pockets (Savory)

I happened upon these by accident when I was having a hard time making the pocket pies I promised for my friend's baby shower. TONS OF VARIATIONS!
- 1 1lb roll of ground turkey
- 1/3 cup finely chopped green peppers
- 1/3 cup finely chopped onion
- 1 1/4 cup prepared spaghetti sauce
- 1 cup shredded cheddar cheese
- 1 pkg flour tortillas
- 1 egg beaten with 1 tsp water (to seal tortillas)
- 1 bottle of veg. oil for frying
Saute green peppers and onions in a pan, cook until tender.
Add turkey and cook until done. Make sure you break it up into small pieces as you cook. Drain.
Mix spaghetti sauce in with meat until well blended.
Warm tortillas in the microwave for 30 seconds so they are easier to work with.
Fill one tortilla with a little less than 1/4 cup of filling, sprinkle on a pinch of cheddar cheese.
With your finger, moisten one half of the tortilla's edge with the egg wash. Squeeze the two sides together until sealed. Fill all tortillas.
Pour and inch and a half of oil into a heavy bottomed skillet. Place over medium high heat for 5 minutes. Test oil (see note).
Place two tortillas at a time into the oil. Fry on one side for about 2 minutes, checking all the while to make sure it's not over browning. Flip and cook another two minutes.
Place on a cooling rack laid over a sheet pan. Sprinkle with salt. Serve warm.

- To Test Oil: drop a small portion of tortilla into the oil to test if it's hot enough. You should see bubbles right away and the piece should float. If not, turn up heat a little and test again in a minute or two.
