Homemade Hot Pockets (Savory)

Submitted by Vanessa

I happened upon these by accident when I was having a hard time making the pocket pies I promised for my friend's baby shower. TONS OF VARIATIONS!

  • 1 1lb roll of ground turkey
  • 1/3 cup finely chopped green peppers
  • 1/3 cup finely chopped onion
  • 1 1/4 cup prepared spaghetti sauce
  • 1 cup shredded cheddar cheese
  • 1 pkg flour tortillas
  • 1 egg beaten with 1 tsp water (to seal tortillas)
  • 1 bottle of veg. oil for frying
  • 1
Saute green peppers and onions in a pan, cook until tender.
  • 2
Add turkey and cook until done. Make sure you break it up into small pieces as you cook. Drain.
  • 3
Mix spaghetti sauce in with meat until well blended.
  • 4
Warm tortillas in the microwave for 30 seconds so they are easier to work with.
  • 5
Fill one tortilla with a little less than 1/4 cup of filling, sprinkle on a pinch of cheddar cheese.
  • 6
With your finger, moisten one half of the tortilla's edge with the egg wash. Squeeze the two sides together until sealed. Fill all tortillas.
  • 7
Pour and inch and a half of oil into a heavy bottomed skillet. Place over medium high heat for 5 minutes. Test oil (see note).
  • 8
Place two tortillas at a time into the oil. Fry on one side for about 2 minutes, checking all the while to make sure it's not over browning. Flip and cook another two minutes.
  • 9
Place on a cooling rack laid over a sheet pan. Sprinkle with salt. Serve warm.
  • To Test Oil: drop a small portion of tortilla into the oil to test if it's hot enough. You should see bubbles right away and the piece should float. If not, turn up heat a little and test again in a minute or two.
