Sauteed Garlic Mushrooms

Vegan Bite with Flavor.

  • 1lb white mushrooms
  • 4 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • Juice from ½ lemon
  • Salt and pepper, to taste
  • 4 tbsp chopped fresh flat-leaf parsley

    Clean the mushrooms and cut any large mushrooms in half. Don't forget to trim the stalks.

    Heat the olive oil, add the garlic and cook for about 20 seconds or until it is slightly brown.

    Add the mushrooms and sauté them over high heat, stirring them most of the time until they have almost absorbed all the oil.

    Lower the heat. When the oil and juice have come out of the mushrooms, increase the heat again until most of the liquid has evaporated.

    Add the lemon juice and the parsley along with salt and pepper. Stir for an additional 1-2 minutes.

    Serve with some fresh Italian bread.
