Balsamic Flank Steak on a Bed of Lettuce

This busy-day dish will leave you with enough time to put on a clean t-shirt and brush your hair before dinner. When's the last time that happened?

  • 1 1/4 pounds flank steak
  • 3/4 cup balsamic vinegar
  • 2 tbsp chopped scallion
  • Salt and pepper to taste
  • 1 head of lettuce
  • 2-3 tbsp prepared vinaigrette dressing

    Place meat, vinegar, and onion in a zip bag. Let marinate in refrigerator for 15 minutes.

    While the meat is marinating, preheat the grill.

    Shred the lettuce and place on a serving platter. Pour the dressing evenly over the lettuce.

    Remove the meat from the bag and place on the hot grill. Cook 5 to 7 minutes on each side.

    Remove from the grill and place on a cutting board. Cover with foil and let stand for 5 minutes.

    Slice the meat on a slant across the grain.

    Arrange on the lettuce and serve.
  • The meat can also be cooked under a broiler.
