Grilled Tofu

The surprising ingredients in this grilled tofu dish lead to a surprisingly delicious dinner.
- 2 (16-oz) containers extra-firm tofu
- ¼ cup canola oil
- ⅓ cup prepared barbeque sauce
- ⅓ cup peanut butter
- 2 tsp bottled minced garlic
Rinse the tofu bricks with water and drain in a colander while you prepare the marinade.
In a medium mixing bowl, combine the remaining ingredients, mixing well with a wire whisk.
Slice each brick of tofu into six equal-sized slabs and place in a shallow pan.
Brush the marinade over the tofu, turning to coat both sides. Marinate for at least one hour.
When ready to cook, coat the grill with cooking spray and prepare the grill to medium heat.
Cook tofu for 5 minutes on each side or until lightly charred and heated through.
To Broil or Bake: When you don't feel like braving the elements to fire up the grill, broiling yields similar results. Simply line a baking sheet with aluminum foil, coat it with cooking spray, and arrange the tofu on the prepared sheet. Broil on the highest rack closest to the broiler for 5 minutes on each side or until lightly brown and heated through.
You can also bake this tofu. Preheat the oven to 350 degrees. Coat a 9 x 13-inch baking dish with cooking spray, and place tofu in a single layer in the dish. Bake for 30 minutes, turning tofu halfway through cooking time.

- If you coat your measuring cup with cooking spray, the peanut butter glides out without sticking.
- Leftovers are great on sandwiches and atop salads and baked potatoes.
- For an easy variation, simply brush your favorite marinade (Teriyaki sauce? Sesame-ginger?) on the tofu slabs and cook according to the directions.
