Curd Rice

- 1 small piece of ginger, finely chopped
- 2 tsp coriander leaves, chopped finely
- 2 green chilies, chopped finely
- Salt, to taste
- 3 cups plain yogurt
- 6 cups cooked white rice
- 1 tsp mustard seeds
- 1 sprig curry leaves
- 1 dry red chili, cut into pieces
- A pinch of hing (asoefetida)
Mix the ginger, coriander leaves, green chilies, and salt into the yogurt.
Add yogurt mixture to the cooked rice. Mix well.
Season with mustard seeds, curry leaves, red chilies and hing.
