Wild Rice With Green Beans, Spinach and Oranges

There's a lot going on in this recipe, and all of it's good.
- 1 6-ounce package long-grain and wild rice mix
- 1 10-ounce box frozen, cut green beans
- 1 tablespoon olive oil
- 1 10-ounce package fresh, washed baby spinach
- 1 15-ounce can mandarin oranges, drained
- ½ cup bottled Italian dressing
- ½ teaspoon salt
- ¼ teaspoon pepper
Cook the rice according to package directions; cool.
Cook the green beans according to package directions, omitting salt.
Drain and set aside to cool.
Meanwhile, in a large skillet over medium-high heat, heat the olive oil.
Add the spinach and cook for three minutes, stirring frequently until wilted; cool.
In a large serving bowl, combine the cooled cooked rice, green beans and spinach with the remaining ingredients.
Toss well to mix.
Serve at room temperature, or chill and serve cold.

- This recipe can be made in advance and is very "tote-able."
