Turkey Meatball Subs

My toddler (who doesn't eat anything) will gobble these meatballs down like they're candy-- and my husband (who doesn't eat anything healthy) will gobble these subs down like they're, well, meatball subs.

  • 1 lb. ground turkey
  • 1/2 cup breadcrumbs
  • 1 tsp. minced garlic
  • 1/4 cup parmesan cheese
  • 1 tsp. basil leaves
  • 1 loaf ciabatta bread
  • 1 cup mozzerella cheese
  • 1 jar spaghetti sauce
  • Tin foil

    In a large bowl, mix turkey, breadcrumbs, garlic, parmesan and basil until all ingredients are blended.

    Roll turkey mixture into 1-inch balls.

    Spray glass 9 X 11 pan with cooking spray. Place meatballs into pan.

    Slice open ciabatta.

    Evenly spread mozzerella on bread and close
  • 6
    Wrap bread completely in tin foil.

    Bake foil-wrapped bread and meatballs for 45 minutes at 350 degrees.

    Warm up a jar of spaghetti sauce.

    Slice ciabatta, layer on meatballs and spaghetti sauce.
  • Sprinkle extra Parmesan cheese on the subs if you want. These meatballs are also great in soup or on spaghetti-- or just plain if you have toddlers.
