Salmon Patties with Yogurt Dill Sauce

A tangy dish loaded with omega-3 fatty acids that will boost your family's brain-power. After-dinner sudoku, anyone?
- 1 14 ¾-ounce can pink salmon
- 2 slices bread, cut in cubes
- 2 green onions, sliced
- 1 large egg
- 1 tablespoon milk
- Dash of salt
- Yogurt Dill Sauce:
- 1 cup low-fat or fat-free plain yogurt
- 1 teaspoon dill weed
- 1 teaspoon Dijon mustard
In a medium mixing bowl, beat egg and milk.
Add salmon, bread cubes, green onions and salt. Mix together.
Form 7-8 small patties with salmon mixture.
In medium pan, heat olive oil over medium heat.
Once oil is hot, add salmon patties. Cook on each side until golden brown, turning once.
Meanwhile, mix yogurt dill sauce ingredients together and place in fridge until ready to use.
Once salmon patties are golden brown, remove from heat.
Top with yogurt dill sauce and enjoy.

- Too much pink? Balance it out with a steamed green vegetable such as asparagus or broccoli.
