Cheesy Artichoke Bites

<!-- -->

These should be called 'tasty temptations', because you'll be tempted to eat them all yourself.

  • 1 (8-oz) package shredded sharp cheddar cheese or reduced-fat cheddar cheese
  • 2 tbsp olive oil
  • 1 cup frozen chopped onions
  • 1 tsp bottled minced garlic
  • 2 (6-oz) jars marinated artichoke hearts, drained
  • 4 large eggs or 1 (8-oz) carton egg substitute
  • ½ tsp salt
  • ⅓ cup Italian-style bread crumbs
  • Dash ground black pepper
  • 1
Preheat the oven to 350 degrees.
  • 2
Coat an 8-inch square baking dish or pan with cooking spray and set aside.
  • 3
In a medium skillet over medium-high heat, heat the olive oil.
  • 4
Add the onion and garlic, and cook until tender, about 5 minutes.
  • 5
In a medium mixing bowl, lightly mash artichoke hearts with a fork.
  • 6
To the artichoke hearts, add sautéed onions and garlic, and remaining ingredients, stirring well to mix.
  • 7
Pour into the prepared dish and bake 45 minutes, or until golden brown around the edges.
  • 8
Remove from oven and allow to cool completely in the dish, about 1 hour.
  • 9
Cut into 1-inch squares and watch them disappear!
  • You can substitute cholesterol-free eggs and reduced-fat cheddar cheese. The texture is slightly different, but it is every bit as delicious.
  • This dish freezes well for up to three months. Make an extra batch for the freezer and pop it in a 350 degree oven for 30 minutes when guests drop by.
