Cheesy Artichoke Bites

These should be called 'tasty temptations', because you'll be tempted to eat them all yourself.
- 1 (8-oz) package shredded sharp cheddar cheese or reduced-fat cheddar cheese
- 2 tbsp olive oil
- 1 cup frozen chopped onions
- 1 tsp bottled minced garlic
- 2 (6-oz) jars marinated artichoke hearts, drained
- 4 large eggs or 1 (8-oz) carton egg substitute
- ½ tsp salt
- ⅓ cup Italian-style bread crumbs
- Dash ground black pepper
Preheat the oven to 350 degrees.
Coat an 8-inch square baking dish or pan with cooking spray and set aside.
In a medium skillet over medium-high heat, heat the olive oil.
Add the onion and garlic, and cook until tender, about 5 minutes.
In a medium mixing bowl, lightly mash artichoke hearts with a fork.
To the artichoke hearts, add sautéed onions and garlic, and remaining ingredients, stirring well to mix.
Pour into the prepared dish and bake 45 minutes, or until golden brown around the edges.
Remove from oven and allow to cool completely in the dish, about 1 hour.
Cut into 1-inch squares and watch them disappear!

- You can substitute cholesterol-free eggs and reduced-fat cheddar cheese. The texture is slightly different, but it is every bit as delicious.
- This dish freezes well for up to three months. Make an extra batch for the freezer and pop it in a 350 degree oven for 30 minutes when guests drop by.
