As flavor-packed as traditional pesto, without the pine nuts.
- 4 cups fresh basil
- ½ cup good-quality olive oil
- 2 tbsp Parmesan cheese
- 1 tbsp oatmeal
- 1 tsp bottled minced garlic
- Salt to taste
- Place all ingredients in a food processor.
- Pulse until a fine paste is formed.
- Serve with pasta or use in any recipe calling for pesto.
