Baked Mac and Cheese

Hard as it is to believe, mac 'n cheese didn't always come in a blue box. Make a batch the old fashioned way and convince the kids that cheese comes in colors other than orange.
- 3 cups uncooked macaroni
- 1 tablespoon butter
- 2 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups milk
- 1 cup shredded Cheddar cheese
- ½ cup grated Parmesan cheese
- ⅓ cup dry bread crumbs
- 2 tablespoons butter
- ¼ cup shredded Cheddar cheese
- 3 tablespoons grated Parmesan cheese
Cook macaroni according to package directions.
Drain and set aside.
In a large, nonstick pan, melt butter over medium heat.
Stir in flour, salt and pepper until smooth. Cook one minute.
Gradually stir in milk.
Bring the mix to a boil and cook for two minutes, until thickened.
Remove from heat and stir in cheese, until melted. Mix cheese sauce into macaroni.
Lightly coat a 1½-quart baking dish with cooking spray.
Add macaroni, cover and bake for 20 minutes.
While macaroni is baking, mix together bread crumbs, remaining butter and cheeses.
Remove macaroni from oven and sprinkle with bread crumb mixture.
Bake uncovered for 10 more minutes or until golden brown.
