Rotisserie Chicken Salad

  • ½ cup pecan pieces
  • 2 cups rotisserie chicken
  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • ¼ tsp fresh ground black pepper

    Pull meat from rotisserie chicken and shred with fingers. Add 2 cups of meat to the bowl. Keep any additional meat from the chicken for another meal.

    Add the remaining ingredients to the bowl and stir to combine. Toast pecans before tossing if you like them crispy.

    Serve chicken salad on whole wheat rolls or over salad greens.
