Rotisserie Chicken Salad
- ½ cup pecan pieces
- 2 cups rotisserie chicken
- ½ cup mayonnaise
- 1 tbsp lemon juice
- ¼ tsp fresh ground black pepper
- Pull meat from rotisserie chicken and shred with fingers. Add 2 cups of meat to the bowl. Keep any additional meat from the chicken for another meal.
- Add the remaining ingredients to the bowl and stir to combine. Toast pecans before tossing if you like them crispy.
- Serve chicken salad on whole wheat rolls or over salad greens.
