Roast Chicken Provence

This is a very easy, once-a-week dinner (the leftovers are great for sandwiches and soup). A staple in our house - the kids' favorite "plain" dinner.
- Roasting chicken (medium-sized, or bigger if you've got a crowd
- A few dabs of butter
- Herbs de Provence ( Tbsp or so)
Remove chicken from packaging, remove entrails from chicken cavity (if any) and rinse chicken in cool water.
Place chicken in a roasting pan, using a small "rack" to elevate chicken so it's not sitting in the bottom of the pan.
Heat oven to 350 degrees.
Spread butter in top of chicken (don't double dip back into the butter after touching the chicken!)
Sprinkle Herbs de Provence all over chicken.
Add water to cover the bottom of the pan.
Place chicken in the oven and cook for two hours, using a large spoon to baste with juices periodically.
When chicken is done (don't be afraid to overcook a bit, as long as you're basting), remove from oven, cut, and serve!

- If the water in the pan starts to evaporate, add more!
