Homemade Potato Chips

You can thank George Crum for your kids' potato chip obsession. The African-American/Native-American chef invented potato chips in 1853 while working at a resort in Saratoga Springs, New York. Give a nod to Mr. Crum by making your own chips at home. You can't beat a history lesson that results in snack food, right?
- 3 baking potatoes
- Cooking spray
- Salt
Scrub the potatoes clean (and peel them, if desired).
Using a sharp knife, slice the potatoes into very thin rounds. The thinner the better. You may have better luck getting very thin slices with a vegetable peeler or a mandolin slicer (if you have fancy kitchen equipment on hand).
Spray a microwave-safe casserole dish with cooking spray and lay the potatoes on it in a single layer.
Sprinkle potatoes with salt, to taste.
Microwave on high for 6 to 8 minutes, until chips are crisp.
Remove from microwave and repeat with remaining chips.

- These chips are not fried in oil, so they're healthier than bagged chips. Feel free to make a second batch!
