Leftover Alfredo

Leftover sausage from last nights dinner? Rinse it off and use it tonight!

  • Pasta
  • 1/3 cup flour
  • 1/3 cup milk
  • 2 tbsp butter
  • 1/3 cup Parmasan cheese, to taste
  • Leftover sausage (or chicken if you prefer)
  • Peas or broccoli

    Put a pot on to boil for pasta. Rinse off sausage, cut and set aside. Turn on cartoons to distract the kiddos.

    Melt 2 tablespoons butter in pan over medium heat. If veggies are uncooked this is the perfect time to have them going. Heat sausage.

    Add 1/3 cup flour and whisk like you've never whisked before! (This can burn easily)

    As soon as butter and flour are combined add milk and continue whisking until smooth. You can cheat and bust out your hand held mixer. Just make sure there are NO lumps.

    Turn heat to low and add Parmesan cheese. Stir until cheese is melted. Some cheeses are strong and 1/3 cup is good. I always taste and see if I need more...ok it's really because I'm a cheese glutton!

    Toss pasta with sausage (or chicken), cheese sauce and veggies. I like peas with the chicken and broccoli with sausage but you can use anything.
  • This recipe can be made with chicken or turkey instead of sausage. Substitute broccoli or peas for any veggie you like.
