Grilled Cajun Catfish

Quick to put together, this dish can be made with just a little bit of a kick - or a lot!
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1/4 tsp salt
- 1 tsp ground black pepper
- 1/2 to 1 tsp cayenne pepper
- 1 tsp dried thyme
- 1 tsp Hungarian paprika
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- 2 pounds catfish fillets
- 4 tbsp olive oil
Combine ingredients from garlic powder through oregano to make a rub. (Reduce the amount of cayenne and black peppers for a milder coating.)
Heat the grill to medium.
Place the fillets on a baking tray. Drizzle with the olive oil and then sprinkle with spice mixture, rubbing with your fingertips to cover. Turn fillets over and repeat on the other side.
Place fish on grill, cover, and cook for 7 to 12 minutes per side, or until the fish flakes easily with a fork. Grilling time will depend on thickness of the fillets.
Serve with lemon wedges.

- The fillets can also be broiled â cook for 7 to 12 minutes per side in a pre-heated broiler.
