Grilled Sirloin Salad

Salad on steak? The upside-down presentation will have kids eating their greens without complaint!

  • 1 small cucumber, peeled and diced (about 1 cup)
  • 2 medium tomatoes, diced
  • ½ cup crumbled bleu cheese
  • 1 small red onion, thinly sliced and diced
  • 1 (2¼-oz) can sliced ripe olives, drained well
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 (1½-lb) sirloin steak

    In a small bowl, combine the cucumber, tomatoes, bleu cheese, onion, black olives, ½ teaspoon each of the salt and pepper.

    Pour in olive oil and vinegar.

    Toss well and set aside.

    Coat a grill rack with cooking spray. Preheat grill to medium heat.

    Sprinkle the steak with the remaining salt and pepper on both sides.

    Grill the steak for about 5 minutes on each side for medium-rare, or to desired doneness.

    Remove the steak to a cutting board. Slice on the diagonal.

    Divide the steak onto 4 dinner plates. Top each with a serving of the salad.
